You can turn off the reopening documents on the General tab of System Preferences. And I’ve turned off the re-open apps on restart thing too, but I’ll be damned if I can find where!!

As to Trackpad, you can turn off any features you don’t like, and make it scroll the right way in the Trackpad tab of System Preferences.

Mail is basic – and for that reason a lot of people use Entourage (Office for Mac 2008 or earlier), Outlook (from Office 2011) or Thunderbird.
